It is made from raw cows milk and vegetable rennet in the Piemonte region of Italy. The cheese name means "shepherd" in the local dialect. It is a soft and delicate open textured cheese with a mottled brown and grey rind. The cheese is aged for 60 days in which time it develops a buttery flavour with hints of mushroom.
