Parmigiano Reggiano cheese is named after the provinces in which it is made, namely Provinces of Parma, Reggio Emilia, Modena, Bologna and Mantua. It is made using unpasteurised cows milk and left to mature for at least 22-24 months. It has a hard, gritty texture and is fruity and nutty in taste and finishes off any pasta dish beautifully.
