SPECK (100g)


Speck is produced in South Tyrol, northern Italy. Speck Alto Adige is made by light smoking salted pork hind and flavoured with a mixture of spices of pepper, juniper, rosemary and bay. It is then left to cure for approximately 22-weeks before applying a special crust of salt.
